Julien Duboué, chef, melts for the Collector

Originally from the Landes region, Julien Duboué is a lifelong lover of his region. Trained by Alain Dutournier at the Carré des Feuillants, then at the George V and in New York with Daniel Boulud, the young man opened his first restaurant, Afaria, at the age of 26. An insatiable entrepreneur teeming with ideas, he went on to create Dans les Landes, A Noste, BOULOM, and La Dalle.


Its many projects are united by the same spirit of conviviality and a single common thread: enhancing the fresh, local products of the Southwest.

Always next to me, it sits on my worktop between the kitchen and the living room.

If you had to suggest a recipe that defines the Collector's personality...

Julian

I'll make a dessert using exotic fruits cut and marinated in aloe vera juice! I'll top it with a wasabi sorbet that will brighten and tickle the taste buds like these branches tickle the sky!
